This one's a keeper and a go to. 

Why Cottage Cheese Cheesecake?

Traditional cheesecake is loaded with cream cheese, sugar, and heavy cream - great in theory, not so great for your goals. This version swaps in cottage cheese as the base, which comes in at around 250 calories per slice with 13 grams of protein - compared to double or triple the calories in a standard slice. Blended smooth, cottage cheese creates a creamy, silky texture that most people genuinely can't tell apart from the real thing.

It's also high in B vitamins, selenium, and calcium, which support bone strength - so you're getting more than just dessert. Paired with Greek yogurt for extra creaminess and a touch of lemon zest for brightness, this cheesecake hits every note.

Ingredients:

  • 1 cup pitted Sukkari Gaf dates
  • 1 tbsp coconut milk
  • Pinch of sea salt
  • 200-250 ml boiling water (adjust for texture)

Method:

  1. Soak dates in boiling water for 20 mins - the longer you soak, the smoother it gets.
  2. Blend with half the soaking water until smooth. Add more water if needed.
  3. Scrape down sides and blend again.
  4. Add coconut milk and blend until creamy.
  5. Stir in a pinch of sea salt.
  6. Chill in the fridge until thickened.

Healthy Cottage Cheese Cheesecake

Ingredients:

  • Optional crust: 3/4 cup honey graham cracker crumbs + 3 tbsp melted butter
  • 1 cup cottage cheese
  • 1/4 cup Greek yogurt
  • 1 egg
  • 2 tbsp sugar
  • 1.5 tbsp flour
  • 1/2 tsp lemon zest or juice

Method: Preheat oven to 350°F. If using the crust, press into a greased 6-inch pan and bake for 10-12 mins first. Blend all cheesecake ingredients until completely smooth, pour into the pan, and bake for 30-35 mins until the edges are set and the centre is slightly jiggly. Let cool fully, then top generously with Sukkari Gaf caramel sauce and enjoy.
